Pig's head. Pig's head is what I love and pig's head is what I talk about all the time now.
(A little more explanation: In "payment" (as if it were needed!) for my dj'ing Emily's party (such a joy I'd pay for the opportunity to do it again) Emily took me to Momofuku tonight. I rose up and was equal to the opportunity and ordered their popular crispy pig's head torchon with aduzuki beans, market greens, olives, and spicy mustard. In was revelatory! It feels so good to have something in my life now that I feel passionate about. A passion for pig's head, that's what I have. Don't tell me that it didn't look good before you read what it was! Basically just a deep-fried crab cake of meat and fat boiled from a hog's skull. What could be better than that? Practically nothing.)

if you like meat boiled from a pigs skull, you should try scrapple. my grandpa was a pig farmer and used to make it all the time. d-lish.
